CSST 9660 Food Technology and Dining Services-Section I
This is the first course of a two semester sequence focusing on dining room operations which provides students with the basic skills required for entry-level work in professional restaurant service and operations. A key component of the course is intensive hands-on training in the Educated Palate restaurant.
All sections will charge a material fee of $75.00
After successful completion of this course, students will be able to:
- Outcome 1: Describe and practice proper food safety, sanitation, and personal hygiene.
- Outcome 2: Identify and apply practices and principles for working in a professional restaurant.
- Outcome 3: Identify, discuss, and apply principles of food costing, menu pricing, and POS systems in restaurant cost controls
- Outcome 4: Discuss and demonstrate service concepts for beverages used in the food industry, including wine, beer, coffee, and tea.
