Explore the dairy farms and animals of California through a tasting of cow, goat and sheep’s milk cheeses. We will delve into appropriate pairings and how to build the perfect cheese plate in your own home. Demystify fromage from a basic standpoint of soil, geography, seasons, terroir and cheesemaking styles. Learn how to embrace the new style of cheeses emerging from California’s trendy North Coasts and Central Valley The It regions of Cali Fromage as well as a sprinkling of lesser known producers from various sub regions of the state. Cured meats, cheeses, olive oils, vegetables, fruits, jams, chutneys and breads are all items that can be easily mass produced in giant commercial kitchens we will study those products that are still hand made the old fashioned way. Decide for yourself which methodology is the correct way to produce goods.
