A two-part course that focuses on the principles of medical nutrition therapy and nutrition applications in public health.  The Clinical Nutrition portion will discuss effects of diseases and disorders on nutrition and examines how diet therapy by itself, or along with other treatment modalities promotes recovery and achievement of optimal nutritional status.  The Community Nutrition component covers basic skills in delivery of nutrition services in community health settings with emphasis on nutrition education.

Instructor Biographies:

Teresa Leu, RD, BA
Teresa is a registered dietitian presently employed as a college health nutritionist at San Francisco State University.  She has many years of experience teaching a diverse student population and brings much enthusiasm, energy, and creativity to her position with the Nutrition Assistant Program. Previous to her current position, Teresa has been employed as a clinical dietitian and a nutrition consultant.

Lisa Yamashiro, MEd, RD
Lisa has practical work experience in nutrition education, community nutrition, and food service management having worked with several multicultural Senior Nutrition Programs (Kimochi, Filipino-American Council, Centro Latino de San Francisco) and the University of California Cooperative Extension (UCCE) in San Francisco/San Mateo Counties.  At UCCE (1999-2007) she provided oversight for the federally-funded Food Stamp Nutrition Education Programs (FSNEP) for adults and youth, and the Expanded Food & Nutrition Education Program (EFNEP) targeting limited resource families. She led and mentored an innovative team of nutrition educators, and enjoyed serving as a preceptor for dietetic and Nutrition Assistant Program interns.

HOEC 99; Acceptance to Nutrition Assistant Program and maintenance of a satisfactory academic performance.

COURSE ANNOUNCEMENTS

Consumer Education Class:  As part of the Community Nutrition class project, pairs of NA students will teach one Consumer Education class during the spring semester to older adults at Canon Kip Senior Center (Wednesday 9:00-noon; April 15, 22, 29, or May 6), or Golden Gate Park Senior Center (Monday 1:00-4:00; April 13, 20, 27, May 4) under the supervision of a faculty RD instructor.
