A two-part course that focuses on the principles of medical nutrition therapy and nutrition applications in public health. The Clinical Nutrition portion will discuss effects of diseases and disorders on nutrition and examines how diet therapy by itself, or along with other treatment modalities promotes recovery and achievement of optimal nutritional status. The Community Nutrition component covers basic skills in delivery of nutrition services in community health settings with emphasis on nutrition education.
Instructor Biography:
Teresa Leu, RD, BA
Teresa is a registered dietitian presently employed as a college health nutritionist at San Francisco State University. She has many years of experience teaching a diverse student population and brings much enthusiasm, energy, and creativity to her position with the Nutrition Assistant Program. Previous to her current position, Teresa has been employed as a clinical dietitian and a nutrition consultant. Teresa has been teaching the Clinical Nutrition portion of HOEC 105 course since 2008.
