  Garde Manger and Garnishings

Garde manger is a French term meaning "guardian of cold meats," and originally meant the official in charge of a royal household kitchen. Later it evolved to mean any cook who specializes in preparing cold meat dishes and decorates food for buffets, smorgasbords, and a la carte presentations. Garde manger also means a cool, airy place next to a kitchen for storing, chilling and preparing basic ingredient: meat, poultry, fish, seafood, fruits and vegetables, and decorating cold food specialties. This modern equivilent is the pantry.
