Old Fashioned Green Split Pea
Ingredients:
| 8 lb. |
Onions, diced ½ inch |
| 8 lb. |
Celery, diced ½ inch |
| 4 lb. |
Carrots, diced ½ inch |
| 8 oz. |
Garlic, chopped |
| 12 each |
Russet potatoes, peeled, diced ½ inch |
| 13 gal. |
Chicken stock |
| 15 lb. |
Green split peas, rinsed |
| |
Cornstarch slurry if needed |
| |
Salt and pepper to taste |
Method:
- In a steam kettle, sauté the vegetables until soft.
- Add the potatoes, chicken stock and peas.
- Bring to a boil and simmer until split peas are cooked through.
- Check the consistency and seasoning.
