Old Fashioned Green Split Pea

 

Ingredients:

  8 lb.   Onions, diced ½ inch
  8 lb.   Celery, diced ½ inch
  4 lb.   Carrots, diced ½ inch
  8 oz.   Garlic, chopped
  12 each   Russet potatoes, peeled, diced ½ inch
  13 gal.   Chicken stock
  15 lb.   Green split peas, rinsed
    Cornstarch slurry if needed
    Salt and pepper to taste

 

Method:

  • In a steam kettle, sauté the vegetables until soft.
  • Add the potatoes, chicken stock and peas.
  • Bring to a boil and simmer until split peas are cooked through.
  • Check the consistency and seasoning.
