Tonkatsu Sauce

 

Ingredients:

   1 gal.    Tomato ketchup
   2 cans    Apple sauce, 29 ounces each
   16 oz.    Honey
   1 qt.    Worcestetshire sauce
   8 cups    Sugar
   4 cups    Rice Wine Vinegar
   5 cups    Soy sauce
   4 cups    White wine
   48 oz.    Apple juice
   24 oz.    Dijon mustard
   1/3 cup    Tabasco sauce
   3 Tsp.    Ground allspice
   1/2 cup    Garlic powder
   1 Tsp.    Ground cloves

 

Method:

  • Place all above ingredients in a large stock pot and slowly
    bring to a simmer
  • Check the consistency and flavor of the sauce.

Recipe #1
Ingredients:

   1/2 Cup    Sesame Oil
   1 Tbsp    Chili Paste
   1-1/2 Qt.    Ketchup
   6 Oz.    Worcestershire Sauce (1 Bottle)
   1/4 Cup    Brown Sugar
   1 Cup    Green Onions Chopped

 

Method:

  • Combine All Ingredients Except Green Onions And Simmer For 10-15 Minutes.

  • Add Green Onions And Serve With Pork Tonkatsu.

 


Recipe #2
Ingredients:

   1 Quart    Ketchup
   1 Quart    Crushed Tomato
   1 Pint    Worcester Sauce
   1 Cup    Red Wine        
   1 Med-Large    Onion (Chopped)
   1 Each    Apple (Grated)
   1 Each    Bay Leaf         
   To Taste    Sugar

 

Method:

  • Saute Chopped Onion And Bay Leaf In A Small Amount Of Salad Oil Until Onion Is Transparent. 

  • Add All The Other Ingredients Except The Sugar. Bring To A Boil And Then Let Simmer.

  • Adjust Seasoning With Sugar.

 


Recipe #3
Ingredients:

   2 ½ Qt    Worcestershire Sauce
   1 Btl.    Ketchup
   1 ½ Qt    Water
   1 Qt.    Granulated Sugar

Combine All Ingredients And Bring To A Boil..

**Recipe Needs To Be Tested And Adjusted.
