Spicy-Tomato Relish
Ingredients:

White vinegar |
| 1 cup |
Light brown sugar |
| 4 Tsp. |
Salt (kosher) |
| 7 lbs. |
Plum tomatoes, seeded and cut into 1/3 inch dice |
| 4 bunch |
Scallions, sliced on the bias |
| 5-7 |
Serrano or Jalapeno chiles, julienne |
| 1/3 cup |
Ginger, fresh ground |
| 20 |
Garlic cloves, sliced thin |
| 6 Tsp. |
Black or yellow mustard seeds |
| 6 Tsp. |
Cumin seeds |
| 2 Tsp. |
Cracked black pepper |
| 3 Tsp. |
Crushed red pepper flakes |
| 1 Tsp. |
Turmeric |
| 2 cups |
Olive oil |
Metod:
- Heat the vinegar, sugar and salt in a saucepan until dissolved
- In a separate saucepan, heat the olive oil until the smoking point
- Add the garlic, ginger and the spices all at once, cook for 1 minute
- Remove from the heat and add the vinegar mixture
- Add the above mixture to the tomatoes and scallions, refrigerate.
