Spice Tomato Chutney

 

Ingredients:

  2 lbs.   Tomatoes, chopped
  2 each   Red bell peppers, chopped
  1 cup   Red wine vinegar
  1 1/2 cups   Cider vinegar
  1 1/2 cups   Sugar
  2 tsp.   Salt
  4 tsp.   Mustard seeds
  1 tsp.   Ground black pepper
  1 tsp.   Red pepper flakes
  1/2 cup   Scallions, chopped

 

Method:

  • In a saucepan, bring the vinegars to a boil with the sugar, salt, mustard seeds, black and red pepper
  • Stir in the tomatoes, bell peppers and scallions
  • Simmer gently for approximately 45 minutes to 1 hour. Stir occasionally.
  • Chill before use. Great with roast beef sandwich.
