Spice Tomato Chutney
Ingredients:
| 2 lbs. |
Tomatoes, chopped |
| 2 each |
Red bell peppers, chopped |
| 1 cup |
Red wine vinegar |
| 1 1/2 cups |
Cider vinegar |
| 1 1/2 cups |
Sugar |
| 2 tsp. |
Salt |
| 4 tsp. |
Mustard seeds |
| 1 tsp. |
Ground black pepper |
| 1 tsp. |
Red pepper flakes |
| 1/2 cup |
Scallions, chopped |
Method:
- In a saucepan, bring the vinegars to a boil with the sugar, salt, mustard
seeds, black and red pepper
- Stir in the tomatoes, bell peppers and scallions
- Simmer gently for approximately 45 minutes to 1 hour. Stir occasionally.
- Chill before use. Great with roast beef sandwich.
