Papaya Salsa

 

Ingredients:

  2 each   Papaya, diced
  3 each   Roma tomatoes, diced
  1 each   Red bell pepper, diced
  1 each   Red onion, diced
  1 each   Jalapeno pepper, minced
  1 T.   Ground cumin.
  ½ cup   Olive oil
  3 T.   Red wine vinegar
  ½ cup   Fresh lime juice
  1 bn.   Cilantro, chopped
    Salt and Tabasco to taste

 

Method:

  • Use with Mahi-mahi, bass, salmon, swordfish etc.
