Minted Sweet Pepper Relish

 

Ingredients:

   1  Lb.    Yellow Onion
   1/2 Lb.    Green Bell Peppers
   1/2 Lb.    Red Bell Peppers (Or Pimentos)
   1/2 Lb.    Yellow Bell Peppers

 

Other Ingredients:

   Taste    Balsamic Vinegar
   Taste    Sugar  
   2 Bn.    Fresh Mint
   Taste    Salt     
   Taste    Fresh Ground Black Pepper

 

Method:

  • Cut Onions And Peppers Into A Brunoise (Keep Onions Separate From Peppers).

  • Chop Mint To A Medium Size.  Set Aside.

  • Saute Onion Until They Just Begin To Caramelize, Add Peppers And Continue Cooking Until Peppers Are Soft.

  • Add Balsamic Vinegar And Sugar To Taste. Continue To Cook Until Ingredients Reach A  Syrupy Or Thick Consistency.  Season With Salt And Freshly Ground Black Pepper.

  • Remove  From Heat And Stir In Chopped Mint.
