Minted Sweet Pepper Relish
Ingredients:
| 1 Lb. |
Yellow Onion |
| 1/2 Lb. |
Green Bell Peppers |
| 1/2 Lb. |
Red Bell Peppers (Or Pimentos) |
| 1/2 Lb. |
Yellow Bell Peppers |
Other Ingredients:
| Taste |
Balsamic Vinegar |
| Taste |
Sugar |
| 2 Bn. |
Fresh Mint |
| Taste |
Salt |
| Taste |
Fresh Ground Black Pepper |
Method:
- Cut Onions And Peppers Into A Brunoise (Keep Onions Separate From Peppers).
- Chop Mint To A Medium Size. Set Aside.
- Saute Onion Until They Just Begin To Caramelize, Add Peppers And Continue
Cooking Until Peppers Are Soft.
- Add Balsamic Vinegar And Sugar To Taste. Continue To Cook Until Ingredients
Reach A Syrupy Or Thick Consistency. Season With Salt And Freshly
Ground Black Pepper.
- Remove From Heat And Stir In Chopped Mint.
