Apple Raisin Chutney

 

Ingredients:

   2 cups    Apple cider vinegar
   2 cups    Sugar
   2 lbs    Granny Smith or Golden Delicious    apples,  peeled, cored, cut 3/4" pieces
   1 cup    Raisins
   5 each    cloves
   1 tsp.    Salt
   1 tsp.    Dried red pepper flakes
   2 tsp.    Ground ginger

 

Method:

  • Stir the vinegar and sugar together in a saucepan. Bring to the boil and simmer for approximately 10 minutes until syrupy
  • Add the remaining ingredients and simmer until the apples are tender and most of the liquid has been absorbed
  • Cool completely. It will keep in the refrigerator for 2 weeks.
