Thai Noodle Salad with Soy-Peanut Dresssing
- Spaghetti noodles, cooked al dente, chilled
- Bean sprouts
- Broccoli florets, blanched
- Green beans, blanched
- Scallions, chopped
- Carrots, shredded
- Red bell peppers, julienne
- Cilantro sprig, garnish
Ingredients for Soy-Peanut Dressing:
| ½ cp |
Fresh ginger, grated |
| 2 cp |
Honey |
| 2 cup |
Creamy peanut butter |
| 2 cup |
Soy sauce |
| 1 ½ cp |
Rice vinegar |
| ¾ cup |
Chili-garlic sauce |
Method:
Sweat the ginger in oil about 1 minute. Add remaining ingredients, whisk, bring to the boil, simmer for 1 minute. Let cool to room temperature before using.
