Thai Noodle Salad with Soy-Peanut Dresssing

 

  • Spaghetti noodles, cooked al dente, chilled
  • Bean sprouts
  • Broccoli florets, blanched
  • Green beans, blanched
  • Scallions, chopped
  • Carrots, shredded
  • Red bell peppers, julienne
  • Cilantro sprig, garnish

 

Ingredients for Soy-Peanut Dressing:

  ½ cp   Fresh ginger, grated
  2 cp   Honey
  2 cup   Creamy peanut butter
  2 cup   Soy sauce
  1 ½ cp   Rice vinegar
  ¾ cup   Chili-garlic sauce

 

Method:

Sweat the ginger in oil about 1 minute.  Add remaining ingredients, whisk, bring to the boil, simmer for 1 minute.  Let cool to room temperature before using.
