Pasta Salad with Pesto
Ingredients:
| 1-1/2 Lbs |
Penne Pasta |
| 1 Cup |
Red Onion, small diced |
| 1 Cup |
Red Pepper, small diced |
| 1 Cup |
Green Pepper, small diced |
| 1 Cup |
Black Olives |
| 1-1/2 Cups |
Pesto |
| 1-1/2 Cups |
Mayonnaise |
| 1/2 Cup |
Parmesan Cheese to taste |
| |
Salt to taste |
| |
Black Pepper to taste |
Method:
- Cook Pasta in Boiling Salted Water. When Done, Cool down with Cold Water, Drain.
- Add Remaining Ingredients Except Mayonnaise, Salt and Pepper. Mix Together Well.
- Season with Salt and Pepper, Combine with Just Enough Mayonnaise to Bind Salad Together.
- Adjust Seasoning.
