Pasta Salad with Pesto

 

Ingredients:

   1-1/2 Lbs    Penne Pasta     
   1 Cup    Red Onion, small diced
   1 Cup    Red Pepper, small diced
   1 Cup    Green Pepper, small diced
   1 Cup    Black Olives
   1-1/2 Cups    Pesto
   1-1/2 Cups    Mayonnaise
   1/2 Cup    Parmesan Cheese to taste
     Salt to taste
     Black Pepper to taste

 

Method:

  • Cook Pasta in Boiling Salted Water.  When Done, Cool down with Cold Water, Drain.
  • Add Remaining Ingredients Except Mayonnaise, Salt and Pepper. Mix Together Well.
  • Season with Salt and Pepper, Combine with Just Enough Mayonnaise to Bind Salad Together.
  • Adjust Seasoning.
