Watermelon & Sweet Red Onion Salad
Ingredients:
| 6T Raspberry Essence |
| 1/4 C Raspberry Vinegar |
| 2 T minced Shallots |
| 1 T Honey |
| 1/4 C oil |
| 1 T Asian Chili Sauce |
| 2 medium Red Onions cut into 1/8
inch rings |
| 2 bu. Watercress |
| 3# Watermelon cut into 2 to 3 inch
triangles 1/2 inch thick and seeded |
| 1/4 C chiffonade of Mint |
| Fresh Berries |
Method:
Raspberry Essence:
In a stainless steel pan add:
| 12 oz. steel pan add: |
| 3 C Red Wine |
| 1 C sugar |
| 1/4 T fresh ground pepper |
| Reduce to 2 cups strain through
a sleve and press out all juices. |
Combine salad dressing w/ onions and marinate for 2 hours.
Top with watermelon slices.
Arrange onion slices on top and drizzle dressing over watermelon.
Garnish with mint and berries.
