Carrot Raisin Salad
Ingredients:
| 3 lbs. |
Carrots (shredded) |
| 3/4 Cup |
Raisins (Plumped) |
| 1/2 |
Red Onion (fine julienne) |
| Appr. 1-1/2 cups |
Mayonnaise (enough to bind) |
| |
Salt to taste |
| |
Pepper to taste |
Method:
- Place raisins in a container and cover with hot water. Let sit for at least
20 minutes.
- Peel and shred carrots.
- Julienne one half of a medium sized red onion very fine.
- Combine the above ingredients and mix with enough mayonnaise to
bind together.
- Season with salt, pepper, tabasco sauce, and Worcestershire sauce
to taste.
