Black Eye Pea Salad

 

Ingredients:

  2.5 Lbs   Black Eye Peas
  2 each   Bay Leaf
  1 each   Red Onion
  1 each   Sweet Peppers (Red, Green, Yellow)
  To Taste:   Oregano
    Cumin
    Garlic
    Cilantro
  About 1/2 Cup   Red Wine Vinegar
  About 1/2 Cup   Olive Oil
    Salt
    Black Pepper (Fresh Ground)

 

Method:

  • Rinse peas with water and drain.
  • Place peas in sauce pan covered with cold water.  Add bay leaves,  Salt and pepper and cook until tender.  (Do not over cook!!!) drain and remove bay leaves.
  • Cut onions and peppers into a brunoise.
  • Chop cilantro.
  • Add onions, peppers, and cilantro to peas, and season to taste with remaining ingredients.
