Black Eye Pea Salad
Ingredients:
| 2.5 Lbs |
Black Eye Peas |
| 2 each |
Bay Leaf |
| 1 each |
Red Onion |
| 1 each |
Sweet Peppers (Red, Green, Yellow) |
| To Taste: |
Oregano |
| |
Cumin |
| |
Garlic |
| |
Cilantro |
| About 1/2 Cup |
Red Wine Vinegar |
| About 1/2 Cup |
Olive Oil |
| |
Salt |
| |
Black Pepper (Fresh Ground) |
Method:
- Rinse peas with water and drain.
- Place peas in sauce pan covered with cold water. Add bay leaves, Salt and pepper and cook until tender. (Do not over cook!!!) drain and remove bay leaves.
- Cut onions and peppers into a brunoise.
- Chop cilantro.
- Add onions, peppers, and cilantro to peas, and season to taste with remaining ingredients.
