Lemon Chicken # 1
Ingredients:
For every three pounds of chicken:

Lemon |
| 1 cup |
Water |
| 2 Tbsp. |
Sugar |

Rind from 1 lemon |
Other Ingredients:
| Garlic |
| Ginger |
| Soy Sauce |
| Sherry Wine |
Method:
- Marinate Chicken in garlic, ginger, soy sauce and sherry wine. Let stand at least 1 hour (over night is better).
- Using vegetable or peanut oil brown both sides of the chicken pieces in a pan (Rindeau, or tilt fryer) starting skin side down.
- Pour off any excess fat or grease.
- Add lemon juice, rind, water, and sugar to chicken and let simmer until chicken is just done.
- Thicken remaining cooking liquid with cornstarch that has been dissolved in sherry wine.
- ** Garnish with sliced green onions.
