Lemon Chicken # 1

 

Ingredients:

For every three pounds of chicken:
   1    Lemon
   1 cup    Water
   2 Tbsp.    Sugar
     Rind from 1 lemon

 

Other Ingredients:

   Garlic
   Ginger
   Soy Sauce
   Sherry Wine

 

Method:

  • Marinate Chicken in garlic, ginger, soy sauce and sherry wine. Let stand at least 1 hour (over night is better).
  • Using vegetable or peanut oil brown both sides of the chicken pieces in a pan (Rindeau, or tilt fryer) starting skin side down.
  • Pour off any excess fat or grease.
  • Add lemon juice, rind, water, and sugar to chicken and let simmer until chicken is just done.
  • Thicken remaining cooking liquid with cornstarch that has been dissolved in sherry wine.
  • ** Garnish with sliced green onions.
