Country Fried Chicken

 

Ingredients:

  15#   All-purpose flour
  5 #         Japanese bread crumbs
  1 cup   Paprika
  1/3 cup   Cayenne
    Salt and White Pepper to taste
  2 gal.   Milk or buttermilk
  20          Eggs

 

Method:

  1. Mix all of the dry ingredients together.
  2. Mix all of the wet ingredients together.
  3. Allow the chicken to marinate in the wet ingredients.
  4. Dredge in the flour mixture, shake off excess.
  5. Place in hot (350 degrees) oil in the tilt fryer.
  6. Fry until golden brown.
  7. Place on cooling racks and finish cooking in the oven until cooked all the way through.
