Country Fried Chicken
Ingredients:

All-purpose flour |
| 5 # |
Japanese bread crumbs |
| 1 cup |
Paprika |
| 1/3 cup |
Cayenne |
| |
Salt and White Pepper to taste |
| 2 gal. |
Milk or buttermilk |
| 20 |
Eggs |
Method:
- Mix all of the dry ingredients together.
- Mix all of the wet ingredients together.
- Allow the chicken to marinate in the wet ingredients.
- Dredge in the flour mixture, shake off excess.
- Place in hot (350 degrees) oil in the tilt fryer.
- Fry until golden brown.
- Place on cooling racks and finish cooking in the oven until cooked all the way through.
