Brine Roasted Turkey or Chicken

 

Ingredients:

 

For the Brine:
  6 oz   Kosher salt
  6 oz   Sugar
  1 Gallon   Water
  2   Cut in half whole garlic
  3-4 sprigs   Whole Rosemary
  3-4   Bay leaves
  1/4 cup   Whole black pepper

 

Other Ingredients:

  1 each   Whole turkey
  1-2 cups   Approx. Mayonnaise
    Fresly ground black pepper

 

Method:

  • Soak turkey or chicken overnight or up to two days in brine.
  • Remove from brine, drain, coat outside with mayonnaise and season liberally with fresly ground black pepper.
  • Roast in oven for 2-1/2 hours at 350° F. (For Chicken, the cooking time will be much less).
