Brine Roasted Turkey or Chicken
Ingredients:
| For the Brine: |
| 6 oz |
Kosher salt |
| 6 oz |
Sugar |
| 1 Gallon |
Water |
| 2 |
Cut in half whole garlic |
| 3-4 sprigs |
Whole Rosemary |
| 3-4 |
Bay leaves |
| 1/4 cup |
Whole black pepper |
Other Ingredients:
| 1 each |
Whole turkey |
| 1-2 cups |
Approx. Mayonnaise |
| |
Fresly ground black pepper |
Method:
- Soak turkey or chicken overnight or up to two days in brine.
- Remove from brine, drain, coat outside with mayonnaise and season liberally with fresly ground black pepper.
- Roast in oven for 2-1/2 hours at 350° F. (For Chicken, the cooking time will be much less).
