Pork Adobo

 

Ingredients:

  30#   Pork stew meat, cut about 1 " pieces
  10   Onions, finely diced
  2 cps.   Garlic, minced
  ½ cup   Fresh ginger, minced
  1 ½  qts.   Soy sauce
    Water, enough to cover the pork
  ¾ cup   Sugar
  ¾ cup   Salt
  1   Bay leaf
  ½ cup   Whole peppercorn
  ½ cup   Black pepper, ground
  2 cps.   Pineapple juice
  12 bunches   Scallions, sliced on the bias

 

Method:

  • Turn the tilt fryer on to 350 degrees.
  • Saute the onions, garlic and ginger for 1 minute.
  • Add the pork and brown well.
  • Add the remaining ingredients except for the pineapple juice.
  • Simmer until the pork is tender-about 1 1/2 hours.
  • Add the pineapple juice and enough slurry to slightly thicken.
  • Garnish with diced green onions.
  • Serve with steamed rice.
