Pork Adobo
Ingredients:

Pork stew meat, cut about 1 " pieces |

Onions, finely diced |
| 2 cps. |
Garlic, minced |
| ½ cup |
Fresh ginger, minced |
| 1 ½ qts. |
Soy sauce |
| |
Water, enough to cover the pork |
| ¾ cup |
Sugar |
| ¾ cup |
Salt |
| 1 |
Bay leaf |
| ½ cup |
Whole peppercorn |
| ½ cup |
Black pepper, ground |
| 2 cps. |
Pineapple juice |
| 12 bunches |
Scallions, sliced on the bias |
Method:
- Turn the tilt fryer on to 350 degrees.
- Saute the onions, garlic and ginger for 1 minute.
- Add the pork and brown well.
- Add the remaining ingredients except for the pineapple juice.
- Simmer until the pork is tender-about 1 1/2 hours.
- Add the pineapple juice and enough slurry to slightly thicken.
- Garnish with diced green onions.
- Serve with steamed rice.
