Batter for Fish and Chips

 

Ingredients:

  6 #   Pastry flour
  2 #   Bread flour
  2 #       Cornstarch
  6 oz.    Baking powder
  1 ½  cps.   Salad oil
  6-7qts.   Ice water
    Salt, pepper and sugar to taste.

 

Method:

  • Combine all of the dry ingredients together in large bowl.
  • Gradually whip in the ice water and oil to form a thin “ paste”
  • Dip fish pieces into batter and then slowly into hot oil- 350 degrees.
  • Brown the fish all over and place on a cooling rack on a sheet tray.
