Batter for Fish and Chips
Ingredients:
| 6 # |
Pastry flour |
| 2 # |
Bread flour |
| 2 # |
Cornstarch |
| 6 oz. |
Baking powder |
| 1 ½ cps. |
Salad oil |
| 6-7qts. |
Ice water |
| |
Salt, pepper and sugar to taste. |
Method:
- Combine all of the dry ingredients together in large bowl.
- Gradually whip in the ice water and oil to form a thin “ paste”
- Dip fish pieces into batter and then slowly into hot oil- 350 degrees.
- Brown the fish all over and place on a cooling rack on a sheet tray.
