Blue Cheese Dressing

 

Equipment:

  • 30 qt. mixing bowl with grinder attachement (ask chef)
  • Whip for 30 qt. mixing bowl
  • Rubber spatula
  • 1/2 gal. measuring container
  • Cup measure
  • Spoon measure

 

Ingredients:

  2 gal.   Mayonnaise
  1/2 gal.   Sour Cream
  3 qts.   Buttermilk
  1 1/2   Wheels Blue Cheese (grind using large whole   disc grinder - see chef for instruction)
  3   Onions Ground (grind using large whole disc   grinder - see chef for instruction?
  2 Tsp.   Granulated Garlic
  2 qts.   Salad Oil
  2 cups   White wine
  1/4 cup   Tabasco
  1/2 cup   Worcestershire
    Salt, pepper and sugar to taste
