Orange Dainties

Ingredients:

| Bread Flour |

| Cake Flour |

| Ground Pecans |
1 Lb. |

| Orange Zest |
|
3 Oz. |
| *Butter |
1 Lb. |
|
| Shortening |
2 Lbs. |
|
| Vanilla |
|
1 Oz. |
Method:
* Butter Must Be At Room Temperature Before Mixing.
- Process Pecans In A Food Processor To A Crumb Mixture. Do Not Over Process,
Or Nuts Will Become A Paste.
- Zest Oranges With Microplane, Set Aside.
- Place All The Ingredients In A 20 Quart Mixing Kettle. Using A Paddle,
Mix In 1st Speed Until Ingredients Are Dampened. Cream In 2nd Speed Until
Light (3-4 Minutes).
- Have A Large Pastry Bag And Large Star Tube Ready. Call Instructor Over
For Demonstration Of How To Pipe Dough Into Final Shape.
- Bake At 3600f For About 10-12 Minutes. Cookies Are Done When Bottom Edge
Is Light Golden Brown.
- Dust With Powder Sugar When Cooled.
