Huckleberry Cheesecake
Yield: 12 to 16 serves
Ingredients:
| 1 1/2 cups graham
cracker crumbs |
| 1/4 cup confectioners'
sugar |
| 1/2 cup butter
(1 stick), melted |
| 2 - 8 ounce package
cream cheese, softened |
| 3 eggs |
| 1 teaspoon vanilla
extract |
| 1 cup water |
| 1 quart huckleberries |
| 1 cup sugar |
| 3 tablespoons
cornstarch |
Method:
- Mix together the graham cracker crumbs, sugar, and butter, and
line a pie pan with mixture.
- Combine the cream cheese, eggs, vanilla, and sugar, mix well
and pour into crust. Bake in a 350* oven for 50 minutes. Cool.
- In a medium saucepan, cook the huckleberries, sugar, cook the
huckleberries, sugar, and cornstarch until thick. Allow to cool
and serve over cheesecake.
