Walter's Rolls

 

Ingredients Part I:

1 Cup
  Water
1 Qt.
  Milk
3 Oz.
  Salt
3 Oz.
  Sugar

 

Ingredients Part II:

7 Lb.   Bread Flour
1 Oz.   Instant Yeast

 

Ingredients Part III:

8 Ea.   Eggs
1 Lb.   Melted Butter

 

Method: 

  • Combine Water, Milk, Salt, And Sugar In A Sauce Pan And Heat Slightly To Just Take The Chill Off The Milk. (70-90 of)

  • Place Flour Into Mixing Bowl And Add Milk Mixture. Mix On First Speed Until Ingredients Come Together.

  • Add The Yeast And Continue To Mix Until Blended In (About 1 Minute).

  • Add Melted Butter And Mix.

  • Add Eggs And Mix About 5 Minutes. Dough Will Be Very Soft And A Bit Sticky.

  • Let Ferment Until Double In Bulk. Form Into Rolls, Egg-Wash, Proof And Bake At 350 Until Golden.

 

Variation: 

Add Fresh Chopped Herbs During The Flour Stage.
