Baking Powder Biscuits

| Pastry Flour |

Ingredients Part II:
| Milk |
3 Lbs. |
10 Oz. |
7 Lbs. |
4 Oz. |
Method:
- Sift The Sugar, Salt, Baking Powder, And Pastry Flour 3 Times
Into A Dish Pan.
- Using Your Finger Tips Or A Pastry Cutter, Cut The Shortening
Into The Dry Ingredients Until The Mixture Looks Like Pea Size
Lumps.
- Add The Milk All At Once, Gently Mix Until All Dry Ingredients
Are Moistened. Do Not Over Mix.
- Place In Refrigerator For 30 Minutes To 1 Hour To Let Rest.
- Roll Out On To A Lightly Floured Bench To About 3/4 Inch Thick.
Cut Into Desired Shapes With Cutters Or A Knife.
- Place On Sheet Pan About ½ Inch Apart.
- Brush With Milk Or Eggwash.
- Bake At 4000f For 10-15 Minutes.
