Carrot Raisin Salad

 

Ingredients:

  3 lbs.   Carrots (shredded)
  3/4 Cup   Raisins (Plumped)
  1/2   Red Onion (fine julienne)
  Appr. 1-1/2 cups   Mayonnaise (enough to bind)
    Salt to taste
    Pepper to taste

 

Method:

  • Place raisins in a container and cover with hot water. Let sit for at least
    20 minutes.
  • Peel and shred carrots.
  • Julienne one half of a medium sized red onion very fine.
  • Combine the above ingredients and mix with enough mayonnaise to
    bind together.
  • Season with salt, pepper, tabasco sauce, and Worcestershire sauce
    to taste.
