Huckleberry Cheesecake

 

Yield: 12 to 16 serves

Ingredients:

    1 1/2 cups graham cracker crumbs
    1/4 cup confectioners' sugar
    1/2 cup butter (1 stick), melted
    2 - 8 ounce package cream cheese, softened
    3 eggs
    1 teaspoon vanilla extract
    1 cup water
    1 quart huckleberries
    1 cup sugar
    3 tablespoons cornstarch

 

Method:

  • Mix together the graham cracker crumbs, sugar, and butter, and line a pie pan with mixture.
  • Combine the cream cheese, eggs, vanilla, and sugar, mix well and pour into crust. Bake in a 350* oven for 50 minutes. Cool.
  • In a medium saucepan, cook the huckleberries, sugar, cook the huckleberries, sugar, and cornstarch until thick. Allow to cool and serve over cheesecake.
